Cupcake splurge

Upon discovering this wonderful website we decided nothing would do it justice more than making FOUR cupcakes from her list.
So ladies and gentlemen i introduce to you:
  • Sour cream raspberry with cream cheese frosting
  • Lemon with cream cheese frosting & lemon curd
  • Peanut butter with peanut butter frosting & chocolate ganache
  • Espresso fudge with chocolate cream cheese frosting

We changed a few things, added half self raising and half plain flour...added lemon peel to the lemon cupcakes (cos that makes sense non?), changed the topping for that completely and decorated that raspberry one with blueberries...why not aye.
Anyway...have a gander....

Time to get pretty...

 Christ. I'm exhausted now.

 Now, as i discovered, whisking the egg yolks and the egg whites (the latter added last) makes for a very light springy sponge which is just so tasty indeed

Now, i know this looks like a kidney or something...BUT let me tell you, it tasted delicious!

Twas moist & fruity & rich & light all at the same time, it that is even possible.
